Ingredients
- 2 clementines, sliced
- 3 oranges or 2 grapefruits, sliced
- 1 fennel bulb, thinly sliced
- 1 green onion, finely chopped
- 1\4 cup (30g) crumbled feta cheese
- 1\4 cup (15g) pistachios, roasted and crushed
Dressing
- Juice of one lemon
- 1 tablespoon of honey
- 1\4 cup (60ml) Paka olive oil

Preparation steps
Using a well-sharpened knife, carefully peel the citrus fruits by removing the white part, then slice them into approximately 7-8 mm thick rounds. Place half of the slices in a salad bowl and arrange the remaining orange and grapefruit slices alternately on a serving platter.
Trim the fennel, remove the core, and thinly slice it. Add the sliced fennel, crumbled feta, and finely sliced green onion to the salad bowl.
Prepare the vinaigrette and gently toss it into the salad. Carefully mix the ingredients, then artfully arrange the salad on the serving platter, over the previously laid-out citrus slices.
Garnish with a few fennel fronds and the roasted pistachios.
